Gluten Free Peanut Butter Fudge Balls Recipe

Air conditioning is really uncommon in houses and apartments in Germany, meaning that for a few weeks a year, baking at my place is unbearable. Because I don’t want to heat the place up to 85 degrees, I have a self-imposed baking ban. So I often turn to no-bake goodies like these banana peanut butter fudge balls or this healthier peanut butter pie.

Although I called these fudge bites, they aren’t exactly fudge – but they’re pretty darn close! My favorite part? They’re totally naturally sweetened with fruit!

All this recipe entails is whizzing everything together in a food processor, refrigerate, roll into balls and bam! Super healthy fudge. And it actually tastes good! I’ve tried way too many similar recipes only to discover that they’re hardly sweet. And I need my fudge to be sweet! The bananas do an awesome job of sweetening the fudge, but to give it a little extra sweetness, I added some dates. The dates also contribute to the fudginess!

If you’re a little reluctant to try this recipe because of the dates – don’t be! I don’t actually like dates but I’m all over them when it comes to no-bake stuff like this where you can’t even taste them.

If you don’t eat these banana peanut butter fudge balls quickly enough, stick them in the freezer for a few months. They’re too hard to eat directly from the freezer but they’ll be good to go after sitting at room temperature for a few minutes.

I piped some chocolate on top but honestly… it was just to make them prettier. If you don’t care about pretty, toss in some mini chocolate chips or roll the balls in mini chocolate chips for a more chocolatey treat. Or if chocolate banana isn’t your cup of tea, leave them out completely. They’re sweet enough without the added chocolate!

These fudge balls are gluten-free, dairy-free and vegan which basically means that almost everyone can eat them! For some more allergy-friendly recipes, check out these gluten free coconut balls. That’s another recipe in which you just mix everything together! Super easy. If you’re feeling ambitious enough to turn on the stove, try these gluten-free no bake cookies!

Ingredients

  • 0.5 Pitted Dates about 16 regular-sized
  • 0.75 Natural Peanut Butter
  • 1 Banana
  • 0.5 Quick Oats certified gluten free
  • 0.25 Oat Bran certified gluten free

Instructions

  • In a food processor fitted with an S-blade, pulse the dates until a thick paste forms.
  • Add the peanut butter and banana and pulse until thoroughly combined.
  • Add the oats and oat bran and pulse a few times until combined. The mixture will be very sticky. If it’s too sticky to roll into balls, refrigerate for 1 hour or until firm enough to roll. If it’s still sticky after refrigerating, use wet hands to roll the mixture into balls.
  • Roll into 20-24 1″ balls. Chill the balls for 2 hours so that they can firm up. Refrigerate for up to 5 days and freeze any leftovers for up to 2 months.
