According to my belly, no matter what I eat for breakfast, at 11 a.m. it’s snack time. It’s so true, I could eat a big stack of pancakes with a side of bacon or a small bowl of cereal… either way when the clock hits 11, my stomach is growling.

All the people who say if you eat a big breakfast you wont be hungry later on… I call them liars, because at least for me that’s not how it works!

For a while I’d chow down random protein bars, but the more I looked at the labels there were way too many words I couldn’t pronounce, plus a hefty dose of high fructose corn syrup in a bunch of them. So I decided to save some cash and make some healthy and less expensive versions at home.

Healthier AND saves you money? Bonus!

This variety is formed into balls for super easy consumption because when I’m hungry you better feed me fast or I get hangry. Oh, come on now, you don’t know what hangry is?? It’s hungry + angry. Hangry. Get it?

My husband gets it very well, and it’s the reason I carry emergency snacks like these around in my purse (there’s also a stash in the car arm rest). Like a good husband he doesn’t call me out on it, though, he’ll just say “Hey honey is it snack time?” which I know is code for “OMG you are acting horrible right now please eat something and stop being hangry.”

Such a good husband that one is.

Another bonus is these are no bake, which is awesome in the summer time when you don’t want to turn the oven on. Not that it’s anywhere close to summer here (it snowed the other day *sigh*) but a girl can dream?

I bet even the kids will love these sweet little snacks – you don’t have to tell them that they’re healthy! (NOTE: For a less healthy, yet equally delicious peanut butter option, consider our chocolate peanut butter pie recipe!)

This peanut butter balls recipe makes for a delicious dessert. And a healthy one, too!

Ingredients
  

  • 1 cup Old Fashioned Oats
  • 4 tbsp Powdered Peanut Butter
  • 6 Pitted Dates
  • 4 tbsp Boiling Water
  • 1 tablespoon, ground Ground Flax Seed
  • 0.25 cup Dark Chocolate Chips

Instructions
 

  • Place oats in a food processor and pulse until they are a flour consistency, set aside.
  • Add dates and liquid to food processor and twirl until dates are finely chopped.
  • Add in oats, PB powder, and ground flax seeds. Process until things start to come together and form a dough.
  • Add chocolate chips and pulse a few times.
  • Form into 1-inch balls. That’s it!
