How to Cook Steak in the Oven Only

Steak – perfect for date night dinners or impressing your guests at dinner parties!

Traditionally steaks have been grilled, or cooked in a skillet on the stove. So it may come as a surprise to discover that you can actually cook tender and delicious steak in the oven.

In fact, if you love a steak that is seared to perfection with a deliciously crispy crust, this cooking method is for you!

And just as you would when grilling or cooking steak in a skillet, you can choose its exact degree of doneness and make sure all your guests are happy!

Tips for choosing the perfect cut

As a rule of thumb you should always look for good quality cuts that are around 1-1.5 inches thick.

If you choose a thinner cut, you will need to keep a closer eye on it while cooking as it will move through the degrees of doneness much more quickly.

Some of our favorite cuts are Ribeye, Sirloin, Filet Mignon and T-bone. 

Always use a high quality oil for cooking your steaks for the best results.

Seasoning your steak

Seasoning your steak will come down to preference, but steak is so versatile that you can really have a lot of fun and get creative with the flavors you use.

Here are some tasty ideas:

  • A simple rub composed of garlic powder, seasoned salt and black pepper
  • Fajita marinade – lime juice, pineapple juice, olive oil, cumin, chilli powder, garlic powder, salt and pepper
  • Chimichurri marinade – (blended) parsley, cilantro, red onion, oregano, garlic, lemon juice, red wine vinegar, sea salt, black pepper, red pepper flakes and olive oil
  • Balsamic and herb – balsamic vinegar, soy sauce, Worcestershire sauce, rosemary, olive oil, Dijon mustard, garlic power, onion powder and black pepper

Choosing your level of ‘doneness’

We recommend using a digital meat thermometer to help during the cooking process to determine the steak’s doneness:

Doneness Temperatures:

  • Rare – 125 degrees Fahrenheit 
  • Medium-rare – 135 degrees Fahrenheit
  • Medium – 145 degrees Fahrenheit
  • Medium-well – 150 degrees Fahrenheit
  • Well done – 160 degree Fahrenheit

How to cook steak in the oven

  1. Allow your steak to rest on the counter for 30-45 minutes to allow it to come to room temperature. Once it has come to room-temperature, pre-heat your oven to 250 degrees Fahrenheit.
  2. Line a dripping tray with foil (saves time doing dishes later!). Put the seasoned steak onto it and place into the oven.
  3. Cook for 25 minutes, testing periodically until the steak reaches 3-5 degrees below the desired doneness temperature above. Take the steak out early as the residual heat will continue to cook the steak for a few minutes.
  4. Allow steak to rest for 10 minutes; in the meantime, turn your oven all the way up. After 10 minutes, put the steak back into the oven to allow it to crisp up on the outside.
  5. Allow your steak to rest for another 10 minutes before serving.
