Arugula Blackberry Salad brings all the fresh ingredients in spring into one salad. Arugula, blackberries, and a bright vinaigrette.

  • 6 Extra Virgin Olive Oil
  • 2 Lemon Juice Or white wine vinegar
  • 1 Garlic Minced
  • 0.25 Kosher Salt
  • 0.25 Black Pepper Freshly ground
  • 3 Arugula (Rocket)
  • 0.5 Cucumber Diced
  • 0.5 Yellow Bell Pepper Diced
  • 0.5 Blackberries
  • 1 Feta Cheese Crumbled
  • 1 Walnuts Chopped


  • Pour the lemon juice and olive oil in a salad dressing bottle.
  • Add garlic, salt and black pepper.
  • Shake to combine all the ingredients.
  • Taste to check the seasoning and it is done.
  • In a large salad bowl, mix together the arugula, cucumber, yellow pepper and blackberries.
  • Just before serving, add the vinaigrette and toss until all the ingredients are coated.
  • Then, garnish with feta cheese and walnuts.
