What Is the Diference Between Lo Mein and Chow Mein?

‘Mein’ is the Chinese word for noodles which is the main feature in both lo and chow mein.

The difference between the two dishes is the way in which the noodles are prepared. Lo mein refers to noodles that have been tossed, whereas chow mein refers to fried noodles.

Both dishes call for Chinese egg noodles, which are noodles made of wheat flour and egg.

When preparing chow mein you can use either fresh or dried noodles, but fresh is best for lo mein.

When making chow mein you can stir fry the cooked noodles with your meat and vegetables to crisp them up.

Alternatively, you can fry the noodles to create a pancake and then top them with the stir fried meat and veggies.

Baked Chicken Chow Mein Ingredients

To make this chicken chow mein at home, you’ll need the following:

Chow Mein Marinade

  • Soy sauce
  • Kosher salt
  • Dry sherry
  • White pepper
  • Cornstarch

  • Chicken breast
  • Chicken egg noodles
  • Chicken stock or broth
  • Ginger
  • Shiitake mushrooms
  • Chives
  • Sesame oil
  • Bean sprouts
  • Black pepper

  • 1 Soy Sauce
  • 0.25 Kosher Salt
  • 1 Dry Sherry
  • 0.25 White Pepper
  • 1 Cornstarch
  • 1 Boneless Skinless Chicken Breast
  • 16 Chinese Egg Noodles
  • 1.5 Chicken Stock
  • 1 Fresh Ginger minced
  • 2 Shiitake Mushrooms soaked and thinly sliced
  • 2 Chives or Chinese flowering chives
  • 2 Sesame Oil
  • 3 Bean Sprouts
  • Black Pepper


  • In a large bowl, mix all of the marinade ingredient and add in the chicken.
  • Bring a large pan of water to the boil and cook the egg noodles for a few minutes before submerging them into a bowl of ice water, blanching them. Drain them well.
  • Once the noodles are dried, line a baking sheet with foil and spread the noodles on it.
  • Heat your oven grill to medium heat and grill the noodles for about 5 minutes on each side to crisp them up, but do not allow them to burn. Set aside.
  • Heat a wok over high heat. Add in the stock and bring to the boil. Add in the ginger, onions and mushrooms and cook for 1 minute. Add in the chicken, cooking for 2 minutes. Add in the flowering chives and sesame oil, stirring and cooking for another minute. 
  • Remove wok from the heat and add in the bean sprouts. Season with black pepper to taste and pour the mixture over the noodles before serving.
