The best ribeye steak recipe is one that’s simple and lets the natural flavor of this wonderful cut of meat shine through!

Tips for Cooking Ribeye Steak

Ribeye steak has to be one of our favorite cuts of meat. It’s so incredibly moist and tender thanks to the fantastic marbled fat that runs right through it, including the ‘eye’ of fat in the middle that gives it its name. The fat in ribeye melts and renders into the meat as it cooks, boosting its flavor and giving it the most gorgeous texture.

One thing to be very aware of, though, is that ribeye shouldn’t be served very rare. That’s because the fat that runs through it won’t have had time to render down and add both flavor and texture to the meat if cooked only lightly.

At the very minimum, ribeye steak should be served medium-rare.

Always make sure you allow the proper resting time – as specified in the recipe – before slicing your steak. If you slice into a freshly cooked steak, the juices will run right out, leaving it disappointingly dry.

But if you leave it to rest, those delicious juices are reabsorbed into the meat, so that every bite is gloriously moist and tender!

How to Make an Easy Peppercorn Sauce

Whilst this ribeye steak recipe is great as it is, you could make a creamy peppercorn sauce to go with it if you wanted to jazz things up a little!

1/3 cup brandy or cognac

3/4 cup beef broth
1/2 cup heavy cream
2 – 3 tsp coarsely crushed whole black peppercorns

Preparation is simple. 
Just add the brandy to the skillet you cooked the steaks in and simmer rapidly until it has mostly reduced and you can’t smell the alcohol (keep scraping the bottom of the skillet as it simmers to incorporate the meat flavor).
Add the broth and continue to simmer rapidly until it reduces by about half.
Lower the heat and add the cream and pepper. Stir, simmering gently, for 3 minutes until thickened.

  • 2 Ribeye Steak bone-in, around 1 lb each
  • 0.25 Chopped Fresh Rosemary
  • 2 Extra Virgin Olive Oil
  • 2 Garlic


  • Pat the steaks dry with paper towels and put them on a plate.
  • Season with salt and pepper on both sides. 
  • Divide the rosemary into two. Sprinkle half of it evenly over top of each steak and press so it sticks.
  • Leave the steaks to come to room temperature (about 30 minutes).
  • Heat a large cast-iron skillet over a medium heat and add the oil and garlic. 
  • Once the oil is hot, push garlic to one side of the pan and add the steaks, rosemary side up. 
  • Cook for about 5 mins, until a dark-brown crust forms on the bottom
  • Turn and cook 3 to 4 minutes on the other side for medium-rare (if the garlic begins to turn brown, remove it). 
  • Transfer the steaks to a cutting board and allow to rest for 5 minutes.
  • Add the rest of the rosemary to the skillet. As soon as it starts to sizzle, stir to coat it with the oil. Tilt the skillet to collect the oil and spoon it over the steaks. 
  • Cut the steaks into slices by cutting parallel to the bone on the diagonal.
