Cajun Sausage Shrimp and Greens Recipe

School is back in full swing, which means the lazy days of summer are long gone. That also means that there is no time for long leisure dinners.

But that doesn’t mean that dinner can’t still be delicious. This Cajun sausage, shrimp and greens skillet is a quick fix for those busy weeknights.

I have been trying to watch my calories. I’m not a fanatic about it but think if I just try to eat somewhat healthy and watch my carb intake, those extra pounds will eventually come off with a little bit of regular exercise.

This skillet can be served with brown rice, cauliflower rice or just a salad on the side. All three are healthy and perfect if you are counting calories.

I used a spicy smoked chicken sausage in this dish but you can use any type of sausage that you like.  If you are watching fat intake, there are plenty of good turkey and chicken sausages that have less calories but plenty of flavor.

Bok choy is the green I use in this dinner recipe. I like it because it has a hearty texture but cooks really quick. Spinach or escarole also works well. I love collard greens and kale but they take much longer to cook. Baby kale is another quick cooking option.

Dinner can be a hectic time at the beginning of the school year but with a little bit of planning, it can make things so much easier.

I never have more than 30 minutes to cook dinner especially during the first few weeks of school.  There are back to school nights, sport practices, and meetings. But my family can also look forward to a good meal at dinnertime with quick and tasty meals like this.

Cajun sausage shrimp and greens are cooked in a skillet to make this delicious dinner. Serve it on a bed of rice and your meal is complete!

  • 2 Olive Oil divided
  • 8 Shrimp peeled and deveined
  • 2 Garlic chopped
  • 0.5 Chopped Red Pepper
  • 8 Smoked Sausage
  • 6 Bok Choy (Frieda’s) or other greens, cleaned and chopped
  • 1 Cajun Seasoning more or less according to taste


  • Heat 1 Tablespoon olive oil in a large skillet on high heat. Add shrimp to skillet and cook until just opaque, stirring often, about 5 minutes. Transfer shrimp to a plate.
  • Add the remaining 1 Tablespoon olive oil to skillet and sauté garlic, pepper and sausage.  Cook for about 5 minutes then add greens. Cook for 5 more minutes on medium heat.
  • Add shrimp back to skillet and sprinkle with Cajun seasoning. Add chicken broth, stir mixture, cover and bring to a simmer.
  • Serve with rice if desired.
