The recipe is versatile, too! You can shape these cakes however you want them – for example, you can put the mixture into a square tin, allow it to harden and then cut it into squares. Alternatively, you can form the mixture into bars, or even put it into circular paper cases.

Cornflake cakes make lovely ‘nests’ for Easter treats – just place a few chocolate mini eggs inside to make them look extra special.

What kind of chocolate should I use?

You can use whichever type of chocolate you like to make these Chocolate Cornflake Cakes.

Milk chocolate is the most common, but they taste great made with dark/plain chocolate too.

For an even sweeter treat, you could make them with white chocolate – or perhaps drizzle over a little melted white chocolate as a topping.

Alternatives to cornflakes

If you don’t have any cornflakes to hand, almost any type of crunchy breakfast cereal will work well in their place. Crisped rice is a popular substitute!

Melting the chocolate

One of the easiest ways to melt chocolate is in the microwave.

Traditionally, chocolate has always been melted in a bowl set over a pan of simmering water, but it’s very easy to leave it a bit too long and end up with a clumpy mess!

If you choose to melt it in the microwave, do it in bursts of 30 seconds and stir well each time. This method always gives smooth results!

  • 3.5 Butter
  • 3.5 Chocolate (use chunks of milk or dark chocolate)
  • 3 Light Corn Syrup
  • 4 Cornflakes


  • Combine the butter, chocolate and syrup in a microwavable bowl.
  • Heat in 30 second bursts – stirring well each time – until the mixture is melted, well combined and smooth.
  • Meanwhile, place the cornflakes into a large bowl.
  • When the chocolate mixture is melted, pour it over the cornflakes and immediately stir gently, so that all the cornflakes are covered in the chocolate mixture.
  • Put spoonfuls in a muffin tin or paper cases and place in the fridge to set. Alternatively, allow the mixture to set in the fridge and slice it afterwards.
