I have a secret. I don’t actually love Thanksgiving dinner. I know, it’s strange. I really don’t like stuffing, all kinds, boxed, made from scratch, even with bacon added – it kind of just gets pushed around my plate.

I’ve always loved the canned cranberry sauce, and am not really a fan of the fresh kind. But I love the smooth little round jelly that pops right out of the can. My uncle lived with us for a few years, and we would just eat it randomly and have little contests on who could slice it into better designs. I won, obviously. 😉

I won’t go near mashed sweet potatoes. Which is weird because they’re one of my favorite vegetables, but if they’re mashed, and they tend to be a lot on Thanksgiving, I can’t stand them. But please! Bring on good ol’ creamy, garlicky mashed potatoes!

I hate leftovers, (which I suppose doesn’t have to do with Thanksgiving dinner in itself, but I always associate it with eating leftovers for days afterwards), and Thanksgiving leftovers always seem to be in overabundance and go on for dayssss.

And finally, the nail in the coffin here, I really, strongly dislike turkey. I KNOW. Growing up, my mom would always, always make a ham along with the turkey specifically for me, because I really just would not eat it. To this day, I am not a huge fan, (like, at all!), but my husband truly loves it, so I try to embrace it. Mostly by smothering it in a gallon of gravy and mixing the bites with my mashed potatoes.

So! Now that I’m cooking my own Thanksgiving dinners the last few years, I change things up to how we like them. The leftovers thing is still an issue, but my husband has no problem eating about 20 turkey day dinners following the beloved feast. 😉

Don’t get me wrong, because I adore Thanksgiving, the holidays are absolutely my most favorite time of the year. I look forward to them and always think they go by farrr to quickly. I could just do without the turkey! 😉

My favorite part of the day though? All the desserts! (except pumpkin pie, not that one. It’s a texture thing… too much mush.) But bring on the cookies please!

Dark Chocolate Cranberry Cookies Recipe

Ingredients
  

  • 0.5 Butter Melted and cooled
  • 0.75 Brown Sugar
  • 0.25 Granulated Sugar
  • 1 Egg
  • 1 Pure Vanilla Extract
  • 0.5 Cinnamon
  • 1.5 All-Purpose Flour
  • 0.5 Baking Soda
  • 0.5 Baking Powder
  • 0.5 Dried Cranberries
  • 0.5 Dark Chocolate Chips

Instructions
 

  • Preheat oven to 325°F, line baking sheets with parchment paper
  • In a large bowl, whisk together the butter and sugars for a few minutes, until the mixture is smooth and a light brown shade.
  • Whisk in the egg, vanilla, and cinnamon
  • Fold in the flour, baking soda and powder until just combined.
  • Stir in the cranberries and chocolate chips.
  • Using a large cookie scoop, drop on a baking sheet 2-inches apart.
  • Pop in the oven and bake for 12-15 minutes until the bottoms are a golden brown.
  • Remove and allow to set for a few minutes before transferring to a cooling rack. Enjoy!
