When it comes to making bread often people find it to be an intimidating process. I can honestly say that in the not-so-distant past, I could include myself in that group. There were plenty of times I failed at making a fresh loaf of bread and I shivered at the thought of tackling another bread project for fear of yet another flat loaf. But when it comes right down to it, making a successful loaf of bread is a matter of a little bit of practice.

Today I have for you this easy focaccia bread baked up in a skillet – it requires no practice, no stress, almost no kneading and the best part of all? Much like making a loaf of crusty no-knead bread, you cannot mess this up.

Making focaccia is easy! This focaccia recipe is made in a cast iron skillet which leads to a light, flaky bread that’s crisp on the bottom. It’s buttery and seasoned with herbs that make it so flavorful.

I love bread recipes that allow me to be creative and inventive. This focaccia is one of those recipes. Right before baking, the dough is brushed with melted butter then let your creative juices flow and sprinkle on whatever strikes your fancy. Any variety of grated cheese or herbs will work. How about Romano cheese, rosemary and lemon zest? Sprinkle on crushed red pepper flakes for a beautiful spicy version.

The flavor possibilities are endless! For this version I mixed together freshly grated parmesan, minced garlic, and spices like oregano, basil, thyme, marjoram, rosemary and paprika. Once baked to golden perfection, you have a fragrant loaf of focaccia bread perfect for enjoying with a big plate of pasta and great for sopping up all that sauce.

This focaccia is light and flavorful and would also be great partnered with Lisa’s Strawberry Spinach Salad, a perfect summer salad. This focaccia recipe is easy to make and ready in about an hour so you’ll surely be adding this bread recipe to your arsenal of go-to recipes.

  • 2 All-Purpose Flour or bread flour
  • 1.5 Instant Yeast
  • 0.5 Granulated Sugar
  • 0.5 Salt
  • 0.75 Water about 100-110°F
  • 2 Olive Oil
  • 4 Unsalted Butter melted
  • 1 Grated Parmesan Cheese
  • 1 Garlic finely minced
  • 0.5 Italian Seasoning
  • 0.125 Paprika


  • In the bowl of a stand mixer fitted with a dough hook, whisk together 1 1/2 cups flour, yeast, sugar and salt until well combined. Add the water and olive oil. With mixer on medium speed, mix until well combined then slowly add 1/4 cup flour and mix until dough begins to pull away from sides and begins to look smooth but will still be sticky.
  • Sprinkle surface with remaining 1/4 cup flour and knead dough until smooth and no longer sticky. Shape dough into a ball and cover with a light kitchen towel.
  • Preheat oven to 150°F then turn the oven off.. Butter or grease a 10”-12” cast iron skillet. Roll dough to size of skillet and fit into skillet. Cover dough again with light kitchen towel and place inside warm oven for 20 minutes.
  • After 20 minutes remove skillet and set in a warm, draft-free place. Preheat oven to 400°F. Using the handle of a wooden spoon or fingertips, poke indentations in dough.
  • In a small bowl, mix together all topping ingredients and brush dough with half the butter mixture. Bake in preheated oven for 20 minutes until golden and puffed. Remove from oven and brush with remaining butter mixture. Cool in pan on a wire rack then slide focaccia out of skillet, cut into squares and serve.
