This pumpkin spice cake is one of our favorite tasty cakes to whip up and enjoy much like this flourless chocolate cake is.
And, other than the fact that this cake is gluten free, this cake is for those days you want to treat yourself as it is on the indulgent side unlike these refined sugar free carrot bars.
You don’t need to whip out your electric mixer to make this gluten free cake. Simply add the wet ingredients like pumpkin puree, eggs, and oil to a bowl and whisk together.
Then add in the sugar, gluten-free flour, salt, and spice blend. I used cinnamon, ginger, and cardamom in this easy cake.
Usually when I make a pumpkin treat, I love the inviting aroma cloves and nutmeg lend to it, along with cinnamon, cardamom, and ginger.
But I made this cake with all five spices and it turned out a lot darker than I wanted it to be. So, I decided to leave them out – and I gotta say, they were not missed.
I have a hard time deciding if I like this sweet spice cake more with a dollop of cinnamon-spiked whipped cream or smothered with a thick layer of buttercream frosting.
By the way, I made the cinnamon-spiked whipped cream by mixing half a cup of non-dairy whipped topping with 1 tsp of cinnamon and 1/4 cup of confectioners’ sugar.
Both ways, they tamed my sweet tooth well and my only regret currently is that I don’t have a piece to snack on as I write this.
Usually I’m burning the midnight oil photographing food for this blog of mine. But that wasn’t the case with these.
You see, I whipped this snack cake up in the early morning hours for a photo shoot at my day job.
I masquerade as a graphic designer by day and recently had the opportunity to marry my day and night-time gigs when I was invited on a product photoshoot with the company I currently work for.
They invited me on their fall/holiday photo shoot, and I got to use their bakeware and cookware to bake up treats like this cake and style them for photos for the upcoming holiday catalogs.

Easy Gluten Free Pumpkin Spice Cake Recipe
Ingredients
- 2 Egg
- 0.5 Corn Oil or Oil of Choice
- 0.5 Pumpkin Puree
- 0.75 Granulated Sugar
- 1 All-Purpose Gluten Free Flour (I used King Arthur’s)
- 1 Baking Powder
- 0.5 Baking Soda
- 0.5 Salt
- 1 Cinnamon
- 0.5 Ground Ginger
- 0.25 Cardamom
Instructions
- Line a 9×9 inch baking tray with parchment paper and give it a quick spray of oil.
- Preheat oven to 350°F.
- Add pumpkin puree, eggs and oil to a bowl and whisk together well.
- Add in the flour, sugar, baking powder, baking soda, salt, ginger, cardamom and cinnamon and mix well
- Pour batter into parchment lined baking tray and bake at 350°F for 25-30 minutes.
- Remove cake from oven and let cool completely.
- Enjoy with cinnamon spiked whipped cream or your favorite buttercream frosting.
