Easy Migas Recipe

Tex-Mex Migas! This is possibly the best way to start the day. And sadly, if you’ve not visited the southwest you may not know about it. Migas is basically soft and cheesy scrambled eggs loaded up with peppers, onion, and fried tortillas.

Plus anything else you want really. Some people will serve this dish with refried beans, top it with salsa or sour cream. It’s basically all the good things involved in Tex-Mex food plus scrambled eggs. Which means we can have it for breakfast.

This is a wonderful dish to make if you have some leftover tortillas. A quick dip in some oil and a sprinkle of salt is all we need to make our own little fried tortilla strips.

If you’ve never done this to make your own fresh tortilla chips, I highly recommend it. Serve some up with a little homemade salsa and we’re good to go.

Making your own fried tortillas is the best way to make this dish work. Fry them up before you make the eggs and add them to the eggs after they are slightly cooked.

Save some though to add to the dish at the end. That way you have the fried tortillas mixed in with the eggs that are slightly softened and you have some fresh crispy ones to add to the finished dish.

Personally my favorite way to enjoy migas is served on a warmed tortilla with some fresh, creamy avocado. My husband would insist on having some chorizo and refried beans with his to make it complete. Basically, you don’t need to follow my recipe exactly. This is one of those dishes that you can really customize as long as the basics are there.

  • 10 White Corn Tortilla cut into strips or chip shapes
  • 0.5 Corn Oil
  • 1 Salt
  • 0.5 Butter
  • 0.25 Diced Onion
  • 1 Red Bell Pepper diced, or green bell pepper
  • 8 Egg
  • 0.25 Milk or cream
  • 1 Cherry Tomatoes halved
  • 0.5 Queso Fresco crumbled
  • 3 Green Onion chopped
  • 0.25 Chopped Cilantro
  • White Corn Tortillas or flour tortillas
  • Avocado
  • Salsa
  • Refried Beans
  • Sour Cream


  • In a small pot, add the oil and heat over medium/high heat until the oil is shimmery. Test the oil temperature by adding a slice of tortilla carefully with tongs. If the oil bubbles and simmers when the tortilla is added then it’s ready. Add the tortilla strips in batches and allow to fry for about 30 seconds then flip to fry the other side. Remove and place on a plate lined with paper towels. Sprinkle with salt and allow to cool. Continue until all the tortillas have been fried.
  • Heat a medium size pan over medium heat and add the butter. Once the butter is melted add the onion and bell pepper to cook until softened.
  • In a small mixing bowl beat the eggs and add the milk or cream. Sprinkle with salt and pepper to taste.
  • Reduce the heat to low/medium. Pour the egg mixture into the pan with the onion and bell peppers. Allow the eggs to cook, once they start bubbling, carefully scrape the eggs with a silicone spatula to scramble them. Continue cooking until the eggs are mostly cooked, about 3 minutes. Add half of the fried tortillas and cherry tomatoes. Cook for an additional minute or until the eggs are cooked. Top with the cilantro, green onion, and queso fresco.
  • Serve immediately with additional toppings as desired!
