German Cucumber Salad

German Cucumber Salad, also known as Gurkensalat, is a simple yet flavorful salad, perfect served as a side dish at a pot-luck or BBQ.

Crisp, refreshing cucumbers mixed with sour cream, vinegar and dill form a wonderful combination with a uniquely delicious flavor. Believe us when we say that this is a recipe you’ll be returning to over and over again!

While our German Cucumber Salad recipe is the creamy version, you can also make a vinegar based one that omits the sour cream and increases the vinegar by 1/4 cup. You’ll also need to add a tablespoon of extra virgin olive oil.

A great make-ahead salad

To allow this salad to fully develop its flavors, we recommend making the dressing ahead of time so that all of its components can infuse. You can add the cucumbers if you wish, but the moisture can be drawn out of the them, which may make the salad a little watery.

We like to add a mixture of thinly sliced cucumbers and chunkier ones in this recipe. The thin ones absorb the dill-icious dressing and the thicker ones add a nice contrast and crunchy texture to the salad. Ensure that you use fresh dill, as dried dill really lacks in flavor and your salad will not be as yummy as it could be! 

To make this summery salad, you will only need 10 minutes prep time! It will stay fresh for about 3 days if refrigerated in an air-tight container.

  • 4 Cucumber around 2.5 lbs, peeled and sliced into 1/4-inch rounds
  • 1 Sweet Onion (small), thinly sliced into rings
  • Kosher Salt to taste
  • 0.5 Sour Cream
  • 0.25 Chopped Fresh Dill
  • 2 White Vinegar
  • Freshly Cracked Black Pepper


  • If you wish to salt the cucumbers to draw out some moisture, place a colander into a large bowl. Add the cucumbers, onions and salt to the colander and toss so that the salt is evenly distributed. Allow this to sit for 1 hour.
  • Line a baking sheet with paper towel and place the cucumbers and onions on it. Lay another layer of paper towel on top and pat dry.
  • In a small bowl, whisk sour cream, dill, vinegar and finish with some freshly cracked black pepper. 
  • In a large serving bowl, add the cucumbers and onions and drizzle with the dressing; toss well to ensure everything is thoroughly mixed.
