Gluten Free Crispy Squash Chips Recipe


Have you been growing squash in your garden this year? Sadly, ours was taken over by squash bugs because it just never took off, which is crazy because that’s actually what normally takes over our garden.

I was pretty sad about it, but thankfully we have a great Farmer’s Market to stop in and get some delicious produce from too.

This past week, I was really craving something that was salty but also a good snack. I was originally thinking of baked onion rings, but then I saw all of that squash I had on hand, so I thought I would make these squash chips instead.

As much as I love Fried Squash, I wanted something a bit more health friendly, so I opted to bake it instead.

I adapted this recipe from the Baked Onion Rings to make Squash Chips. Much to my surprise, my kids quickly started grabbing them and eating them too.

Considering they rarely want to eat vegetables, I was shocked!

I decided I’d be making these regularly for snacks, plus doing this same method with other vegetables too.

They are also great to put in lunches too, because we felt like they were just as good cold as they were warm.

The key to making these gluten-free is to use gluten-free all-purpose flour, plus gluten-free breadcrumbs. I also added a little olive oil spray to the breadcrumbs to brown them a bit.

Sometimes the gluten-free breadcrumbs need a little bit extra to add to the flavor.

I’m even thinking maybe I should try some with ranch seasoning? It sounds different but given how much we love ranch, I bet it would be super tasty too.

These Gluten Free Crispy Squash Chips are the perfect option for a healthier snack. They’re deliciously salty, crunchy, and better for you than the standard chip!

  • 1 Yellow Squash
  • 1 Skim Milk
  • 2 All-Purpose Gluten Free Flour
  • 2 Egg
  • 2 Gluten Free Bread Crumbs
  • 0.5 Salt
  • Olive Oil Cooking Spray (Great Value)


  • Preheat the oven to 425°F.
  • Thinly slice the yellow squash into rounds.
  • Place the squash in a 9×13 baking dish and pour the milk over it to soak for about 10 minutes.
  • Prepare another bowl with the flour.
  • Prepare a second bowl with the eggs, whisk them well.
  • Lastly, prepare a bowl with the gluten free breadcrumbs and salt.
  • Dip each slice of squash into the flour then into the egg and coat with the breadcrumbs.
  • Place the squash on a broiler pan.
  • Spray it evenly with the cooking spray.
  • Bake for 15 minutes or until browned, serve with additional salt if desired.
