Ground Beef Stroganoff

Beef Stroganoff is a dish enjoyed across the world! Typically quite heavy, beef stroganoff features pieces of beef and mushrooms in a delicious creamy sauce, served over noodles.

This Skillet Ground Beef Stroganoff offers a lighter version by featuring lean ground beef, less fat cream cheese and reduced-fat sour cream.

Beef stroganoff originates in Russia from the mid-19th century, but was interestingly cooked by a French chef who served the wealthy St. Petersburg family. This dish was entered into a cooking competition and won; as an act of kindness towards his employer, the French chef named the dish after Alexandrovich Stroganov.

After becoming a hit in Russia, stroganoff then become very popular in Shanghai, China. It finally made its way across to the United States but did not become a well-known household dish until after the second war.

If you wish to make this the traditional way and include chunks of beef as opposed to lean ground beef, the best cuts to use are top sirloin, ribeye, beef tenderloin or filet mignon tips.

To ensure they are beautifully tenderized prior to cooking, marinate them overnight in the fridge. You can then follow the rest of the recipe below and sear them first, remove them from the heat and then return them later to braise.

Instead of serving over noodles, why not consider some spirallized veggies? Butternut squash, sweet potato, carrots and zucchini all make excellent choices when it comes to making a side that resembles pasta.

If you just can’t live without pasta, try to find wholewheat options or pastas that have a vegetable base. You could also opt for natural yogurt in place of the sour cream and make use of light extra virgin olive oil to reduce your overall calorie intake.

If you are not counting calories and want to make this an indulgent meal, feel free to swap the penne pasta for egg noodles, rice or even homemade mashed potatoes! You could also try splitting a loaf and using the stroganoff to create a wonderful sandwich!

  • 1 Lean Ground Beef
  • Kosher Salt and Black Pepper
  • 10 Mushrooms halved or quartered if large
  • 1 Extra Virgin Olive Oil
  • 1 Onion chopped
  • 1 Carrot
  • 3 Garlic finely chopped
  • 0.5 Paprika
  • 1 Tomato Paste
  • 1 Low-Sodium Beef Broth
  • 1.5 Water
  • 1 Worcestershire Sauce
  • 2 Penne
  • 0.25 1/3 Less Fat Cream Cheese
  • 0.25 Fat Free Sour Cream
  • 2 Fresh Chopped Parsley
  • 2 Chopped Fresh Chives


  • Season the ground beef with salt and pepper.
  • Using a large non-stick skillet, add the beef and brown over medium heat. Make sure you use a spoon or spatula to break up the ground beef as it cooks, you won’t want it too clumpy. Brown for about five minutes. Transfer the ground beef to a separate bowl and reduce the heat slightly.
  • Add the mushrooms to the skillet and season to taste with salt and pepper, cooking for about 8-10 minutes. Once cooked, transfer the mushrooms to the bowl with the beef.
  • Add the oil to the skillet, followed by onion, carrot, garlic and paprika. Cook until the carrots have softened and the onions have started to brown, roughly 10 minutes.
  • Add the tomato paste to the pan and stir well. Keep stirring so that all the vegetables are coated and cook for about 2-3 minutes. Next, add the beef broth, water and Worcestershire sauce and bring to a simmer.
  • Add the pasta, cover the skillet and cook according to the directions on the package until they are al dente. Once cooked, uncover and stir well. Add the beef and mushrooms back to the skillet and stir. Allow them to heat through.
  • Remove heat and stir in the cream cheese, sour cream, chopped parsley and chives, and salt and pepper to taste. Stir well until the cream cheese has melted and the sauce is lovely and creamy. Split across 6 bowls and serve immediately.
