Jerk Fish Tacos with Pineapple Slaw Recipe

Fish tacos might be one of my favorite healthy things to eat. There is something about the texture of flaky fish nestled in a bed of crunchy but sweet slaw on a corn tortilla that makes me want fish tacos again and again.

These tacos can be topped with anything else you’d like. I serve many different toppings however cilantro, avocado and green salsa are my favorite. I also like to serve some guacamole and chips on the side.

Most mild white fish works well for this recipe however I prefer monkfish or cod. Monkfish is sometimes called the poor man’s lobster because of its meaty, lobster-like texture. All it needs is some jerk seasoning and lime juice to have a delicious flavor.

The monkfish is grilled in a pan for a few minutes and is such an easy taco filling to cook. I also like to use cod or tilapia but you can really use any type of fish you like.

The Jerk Fish Tacos with Pineapple Slaw are easy to put together and then it’s time to relax with a cocktail. Mango margaritas  or mojitos are both perfect with these tacos. Basil Peach Agua Fresca is also a great drink to serve if you are looking for a nice non- alcoholic summer drink. 

My favorite place to eat these tacos is on my patio. Roasted corn and tomato salad or another simple salad goes great next to them. I prefer to make any kind salad that can be prepared in advance. It’s much easier to enjoy dinner this way.

Now that you see how easy these fish tacos are to make, I hope they go on your dinner rotation often. I seriously could eat tacos three times a week.

Ingredients
  

  • 3 Cabbage Cole Slaw Mix (Dole)
  • 0.5 Chopped Pineapple drained if canned
  • 1 Honey
  • 3 Olive Oil divided
  • 2 Lime Juice
  • Salt and Pepper
  • 16 Fish Fillet
  • 1 Jerk Seasoning Blend
  • 8 Corn Tortilla or flour tortillas, taco size
  • Salsa
  • Guacamole
  • Chopped Cilantro

Instructions
 

  • In a medium bowl, mix together slaw mix, pineapple, honey, 2 Tablespoons olive oil (reserve one tablespoon) and lime juice. Season with salt and pepper to taste. Set aside.
  • In a large frying pan, heat the remaining 1 tablespoon of olive oil.  Season the fish filets with the jerk seasoning and salt and pepper.  Add the fish to the pan and cook for 3 to 4 minutes on each side or until fish is no longer translucent and flakes with a fork. Break fish up into pieces so it is ready to put in the tacos.
  • To assemble tacos, add some slaw and fish to each tortilla.  Top with extra toppings if desired. Tortillas can be heated in a pan, on a grill or in an oven before filling if desired.
