Or should I say it’s almost “eat all the vegan buffalo patties, buffalo wing cups, buffalo chicken hash AND crockpot buffalo chicken dip with cauliflower DAY?”

And now we are going to add a slice of this spicy, protein-packed baked spaghetti squash casserole to the list of “buffalo chicken things that it is mandatory to eat on Game Day.”

Which is also the list that I call “the only way to get Taylor to watch tiny men run around in WAY TOO TIGHT outfits, throwing a ball at each other’s heads.”

It’s funny how GOOD FOOD will just change your perspective, and make things that used to seem pointless (liiike, watching football) just make SO MUCH SENSE.

Anyway.

This here casserole dish full of GOODNESS could come at yo’ mouth in MANY ways:

1.       As mentioned before, you could serve this paleo buffalo chicken casserole up in small pieces as one of your game day eats.

2.       You could get in “football food mood” EARLY and serve this baked spaghetti squash yumminess to your family FOR DINNER one evening BEFORE the big day.

Or after. You’re the boss of your life. YOU MAKE THE RULES.

3.       Your super-prepared-plan-ahead kinda self could make it up on meal prep Sunday, and then package it up to send with all the people that you are required to feed (IE: your family) FOR LUNCH.

Seriously. I think we can agree that casseroles make a MEAN lunch. There’s something so magical about being in the middle of a hard day at the office and/or school, and then finding a cozy casserole hanging out in your lunch box, waiting for you to lend a listening ear as you release all your angry/frustration/sadness and HUNGER ON IT.

I know you understand me. I can tell you this paleo casserole recipe fits those EXACT SHOES.

We may be giving thos paleo buffalo chicken casserole way too many human qualities at this point though. I don’t want you to start feeling cozy-fuzzy-friend feelings towards dinner and then NOT EAT IT.

Speaking of eating, can we talk about the fact that this casserole-made-of-vegetables was actually HAPPILY munched by a MAN (Mr.FFF, to make sure you know what’s up) who GROANS every time I tell him that I am making vegetable casserole (remember the paleo Cajun cauliflower casserole incident) and asks if I will ever make “normal food” again?

Hey. Starting this blog was HIS idea. Therefore, he signed up for this.

Anyway. He ate it. He ate seconds AND he even took it to school for lunch the next day. ßHe also has “issues” with eating the same thing over and over (again, why did he suggest I start a blog?) so this is BIG NEWS.

It might have had something to with the fact that you can basically bufflalo-chicken-anything and it IMMEDAITELY turns into man food. But, I am sure it was ALSO because this paleo buffalo chicken casserole is just SO GOOD.

Ingredients
  

  • 1 Spaghetti Squash 3.25 lbs
  • 0.5 Olive Oil
  • 0.5 Sea Salt
  • Black Pepper
  • 1 Chicken Breast
  • 0.5 Hot Sauce
  • 6 Paleo-friendly Mayonnaise
  • 0.25 Green Onion sliced plus additional for topping
  • 1 Egg White

Instructions
 

  • Preheat your oven to 400°F and line a baking sheet with tinfoil. Additionally, grease a casserole dish with a little bite of olive oil.
  • Cut the squash in half and scrape out the seeds. Rub the inside with the olive oil and sprinkle with salt and pepper.
  • Bake, cut-side down, until fork tender, about 30-40 minutes. Set aside to cool.
  • While the squash cools, bring a large pot of salted water to a boil. Once boiling, cook the chicken breast until no longer pink inside, about 15-20 minutes. Drain and set aside to cool.
  • Scrape the strands out of the cooled spaghetti squash and spread them out in one even layer on a piece of paper towel. Use another layer of paper towel to press out as much moisture as you can. Then, repeat with another paper towel.*
  • Once this is done, you should have about 3 lightly packed cups of spaghetti squash (or about 480g) Place into a large bowl.
  • Shred the chicken breasts (you should end up with about 3 packed cups of shredded chicken or 300g) and add it into the bowl with the squash.
  • Add all the remaining ingredients and stir until well combined.
  • Transfer into the prepared casserole dish, pressing out flat. Bake at 400 degrees, uncovered, until the edges are golden brown, and the top feels set, about 30 minutes.
  • Turn the oven to high broil and broil for 5 minutes. Then, let stand for 5 minutes to cool.
  • Garnish with extra onions and DEVOUR!
