Paleo Pork Pineapple Stir Fry Recipe

Summer is my favorite time of year for easy stir fry dinners. They cook in one pan so there are less dishes to wash.

They take less than 30 minutes to cook which means you can spend more time at the pool. And they are a great way to use up all the things that have been in your fridge for too long.

This Paleo Pork and Pineapple Stir Fry is so simple, and it is one of those dinners you can throw together in less than 30 minutes, using things you probably already have on hand!

I use boneless pork chops in this recipe because they cook super-fast, they are easy on the budget, and they’re delicious.

The pork chops get diced and then browned on all sides. And you want to just brown them – don’t cook them all the way through – because they are going to finish cooking in the sauce.

There is nothing worse than an overcooked pork chop.

Once the pork chops are browned, you sauté onion and garlic in the same pan and then the pineapple gets added along with a delicious sauce.

The stir fry sauce is made with canned pineapple which everyone has in their pantry, I’m sure. The pineapple juice from the can gets whisked together with coconut aminos, fresh ginger, honey, and arrowroot powder.

Everything simmers together until it thickens, only about 5 minutes. Sprinkle it with sliced green onions and crushed red pepper flakes and it’s done!

I serve it with cauliflower rice, but you could pair it with zucchini noodles or roasted broccoli or rice if your diet allows it.

It is sweet from the pineapple and spicy from the crushed red pepper and it’s so delicious.

This recipe would be great for paleo meal prep because it will stay good in the fridge for up to 5 days!

  • 1 Unsweetened Pineapple Chunks
  • 3 Coconut Aminos
  • 1 Grated Fresh Ginger
  • 1 Honey
  • 1 Arrowroot Flour
  • 1 Avocado Oil
  • 1 Boneless Pork Chop cut into 1-inch pieces
  • 1 White Onion diced
  • 3 Garlic minced
  • Salt and Pepper to taste
  • Green Onions sliced, for serving
  • Crushed Red Pepper Flakes for serving
  • Cauliflower Rice cooked, for serving


  • Drain pineapple, reserving the juice. Set pineapple aside. In a small bowl, whisk together pineapple juice, coconut aminos, ginger, honey, and arrowroot powder. Set aside.
  • Heat avocado oil over medium-high heat in a large skillet. Add pork and cook until browned on all sides, about 5 minutes. Remove to a plate and set aside.
  • In the same pan, cook onion until it begins to soften, about 2 minutes Add garlic and cook until fragrant, just 30 seconds. Pour in the pineapple juice mixture and stir to scrape up any browned bits in the skillet. Add pork and pineapple chunks.
  • Bring the mixture to a simmer and let cook until thickened, stirring frequently, about 5 minutes. Season to taste with salt and pepper.
  • Sprinkle with sliced green onions and crushed red pepper flakes. Serve over cauliflower rice, if desired.
