Paleo Sausage Vegetable Skillet Recipe


I sort of feel like I made it as a mom. Not in all things – I mean I don’t think I am amazing or anything, but something happened the other day that made me burst with happiness.

My 13-year-old son is not the best eater. He certainly isn’t the worst either. But if you asked him to choose between a juicy, red apple or cheese crackers, he is going to choose cheese crackers every single time.

He isn’t picky; he just likes to make poor food choices. I suppose his choices are relatively normal. I think a lot of kids his age gravitate towards processed foods.

I’ve tried so hard to change his ways. Since my husband and I have decided to add more Paleo foods into our diets, I have introduced the family to more fruits and vegetables than they are used to seeing.

Our fridge is always stocked with cut, ready to eat produce. For the most part, the kids have done really well with our new diet.

But it’s easy to eat healthier when dinner is Easy Baked Hawaiian Chicken  or when there are Pina Colada Energy Balls at the ready.

The trick is to get my son to WANT to snack on fruits and veggies without any prompting from me.

Last week, as I was making my grocery list, I asked the kids what they needed from the store. My son said, “We need more produce, Mom”. And I high-fived myself.

I am sure I fail at being a mom in so many ways, but lordy, at least the boy appreciates good food!

Now let’s talk about this vegetable skillet. This is one of those fabulous, “clean out the kitchen” meals.

If you find yourself with produce that you don’t know what to do with, throw them in this skillet. The fresh vegetables add so much color and nutrients!

I did also add canned artichokes and fresh lemon juice to the mix to liven up the dish, and I used lean chicken sausage as my protein, but any protein will do! This is a quick meal with a variety of flavors and textures that is handy for any night of the week!

  • 3 Bacon chopped
  • 1 Zucchini Squash sliced
  • 1 Yellow Squash sliced
  • 0.5 Salt divided
  • 2 Chicken Sausage sliced
  • 1 Canned Artichoke chopped
  • 1 Cherry Tomatoes halved
  • 2 Fresh Spinach
  • 3 Olive Oil
  • 2 White Wine Vinegar
  • Lemon
  • 0.5 Fresh Thyme chopped
  • 0.5 Chopped Fresh Rosemary
  • 2 Garlic minced


  • Heat a large skillet over medium heat and add bacon. Cook and crumble bacon until crisp, remove and set aside. Wipe out all but about 1 teaspoon of bacon grease from the skillet.
  • Add zucchini and squash to the skillet, season with 1/4 teaspoon of salt.
  • Cook the vegetables for 2-4 minutes or until they begin to soften.
  • Add sausage to the skillet; stir.
  • Mix artichokes and tomatoes into the skillet.
  • Add spinach and cook just until spinach begins to wilt, but retains its color.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, herbs, garlic and remaining salt.
  • Drizzle dressing over skillet, adding more fresh lemon juice if desired.
  • Serve.
