Pan Fried Lamb Chops with Rosemary Recipe

I used to think that cooking lamb was intimidating. But that was before I tried a lamb chop recipe.

Now lamb chops are on my week night menu at least once a month. My family loves them so why not make them a treat for dinner?

Tips for buying lamb chops:

The two most popular lamb chops are loin chops and rib chops, also called lamb lollipops.

You should be able to find both in your grocery store. I prefer the loin lamb chops because they are meatier and much less expensive that the lamb rib chops.

While rib chops might be the Cadillac of lamb chops, the loin chops are still flavorful and a much better value to me.

Buy lamb chops that are one inch thick and all even in size. This will insure that they will all cook evenly to however you like them.

Typically I buy two small lamb chops per person.

How do you cook Pan Fried Lamb Chops?

These lamb chops are seasoned then seared with a bit of grapeseed oil on medium high heat for about 4 to 5 minutes per side.

Grapeseed oil has a high smoking point so I frequently use it when cooking meat at high heat.

My cast iron pan is a favorite to cook lamb chops in.

I have also used a stainless steel pan but I prefer the cast iron because it creates a beautiful golden crust of the chops.

What should you serve with this lamb chop recipe?

My husband and son are meat and potato guys so I always serve potatoes with this recipe.

Their favorites are Olive Oil Mashed Potatoes or baked potatoes. I also will make a vegetable like Roasted Lemon Asparagus or Sautéed Mushrooms.

But if you would prefer a vegetarian pasta dish on the side that will always work too.

  • 8 Lamb Loin Chop (about 2 pounds)
  • 1 Sea Salt
  • 0.5 Garlic Powder
  • 0.5 Black Pepper
  • 1 Dried Rosemary (Dried)
  • 2 Grapeseed Oil


  • Sprinkle the lamb chops on both sides with the salt, pepper, garlic powder and rosemary.
  • Add oil to a large cast iron or heavy steel pan on medium high heat until very hot.
  • Carefully put in the lamb chops and sear them for about 4 minutes (for medium rare doneness) on each side.
  • Cover with foil and let rest for 10 minutes before serving.
