Ingredients
  

  • 1.5 cup All-Purpose Flour plus more for dusting
  • 4 large Egg
  • 2.33 cup, packed Light Brown Sugar
  • 0.5 tsp Baking Powder
  • 0.5 tsp Salt
  • 1.5 cup, chopped Pecans
  • 1 tsp Pure Vanilla Extract

Instructions
 

  • Preheat the oven to 350 and spray a 13 X 9-inch pan with vegetable oil. Also, dust with flour.
  • Beat the eggs with a whisk in a bowl and stir in the brown sugar until smooth.
  • Pour into the top of a double boiler.
  • Cook this mixture over simmering water for 20 minutes, stirring constantly, until it reaches 180 degrees F.
  • Let cool for 5 minutes.
  • Sift the one-and-a-half cups of flour, baking powder and salt together.
  • Add the pecans to flour mixture and mix into the cooked mixture.
  • Add vanilla and stir until combined.
  • Pour the batter into the prepared pan and place the pan in the oven. Bake for around 25 minutes.
  • Let it cool completely in the pan before cutting into pieces. Store in an airtight tin in the refrigerator.
