Pork Ribs in Crock Pot Recipe

Once you’ve tried ribs that have been cooked in the crock pot, you won’t ever want to cook them any other way! By cooking them slowly and gently, you give them an amazing texture that – quite literally – melts in your mouth!

It’s also a very easy and convenient cooking method – and all you need to do once the ribs are cooked is finish them off in the oven, slathered in sauce, to create the wonderfully sticky glaze that no good rib will be seen without!

Our secret tip for better ribs!

Although it’s not essential, we find that ribs absorb the flavor of the sauce far better if the membrane is removed from the back.

To do this, start at one end of the rack and push a blunt knife underneath the membrane, but over the bone. Start lifting the membrane away from the bones. If you’re lucky, it will come off in one piece, although we find that it tends to take a few attempts to remove it all.

Do the ribs HAVE to go in the oven?

If you’re reading this after searching for ‘pork ribs in crock pot’, then you’re probably hoping to cook them in the crock pot from start to finish.

But whilst the ribs WILL be cooked after the initial cooking time in the recipe below, you’d probably be quite disappointed if you tried eating them at that point. There wouldn’t be any caramelization of the BBQ sauce that makes ribs so yummy, and the sauce would be very, very runny. 

So the final steps are essential to getting the ribs to taste and look the way you’d expect.

You don’t have to use your oven, though – another option is to finish the ribs on the grill or under the broiler.

To finish ribs on the grill:

Brush the ribs with plenty of sauce and place them directly on the grill grates, or on to aluminium foil , over a high heat. Close the lid and cook for 5 minutes.

To finish ribs under the broiler:

Brush them generously with BBQ sauce and place them under the pre-heated broiler for around 5 minutes.

Ingredients
  

  • 2 racks Baby Back Ribs
  • Kosher Salt
  • Freshly Ground Black Pepper
  • Apricot Preserves (13 oz jar)
  • 1 cup Ketchup
  • 1/4 cup Prepared Yellow Mustard
  • 1/4 cup Soy Sauce
  • 6 cloves Garlic finely chopped
  • 2 Chipotle Pepper in Adobo
  • 1 1-inch piece Fresh Ginger finely chopped
  • Hot Sauce
  • 3 tablespoons Cornstarch

Instructions
 

  • Divide the racks into 2 rib pieces and season with salt and pepper. Place them into a slow cooker.
  • Combine the preserves, ketchup, mustard, soy sauce, garlic, chipotles, ginger and hot sauce in a bowl and pour it over the ribs. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  • When the ribs are done, preheat the oven to 375 degrees F and line a baking sheet with foil.
  • Carefully place the cooked ribs on to the baking sheet in a single layer.
  • Skim the fat from the surface of the juices, then pour them into a pan. Bring them to a simmer over a medium high heat. 
  • Meanwhile, stir 3 tablespoons of water into the cornstarch in a small bowl, then stir the mixture into the pan juices. Cook until the desired thickness is reached.
  • Brush the ribs with the sauce and place them in the oven for around 45 minutes, removing them every 10 to 15 minutes to brush them with more sauce. When the ribs are done, they should appear glazed and sticky.
  • Serve with extra sauce on the side.
