Raise your hand if you want a meal that’s easy to make, delicious and can be reheated in the microwave the next day. While this is the criteria for most of my dinners, it becomes one of my favorites if it includes pasta.
During the cold weather, I crave pasta all the time. It’s perfect comfort food and contrary to popular belief, it can be prepared as a healthy meal without a ton of fat. I like to pair it with a protein and some vegetables to make it a well- balanced dish. Who am I kidding? I will eat pasta any day in the summer or warm weather too.
My choice of protein is spicy turkey sausage. Any type of sausage will work well in this dish, but spicy turkey sausage is leaner than pork sausage and I like anything spicy to kick things up a bit.
This recipe is ready in under thirty minutes from start to finish. It’s the type of meal that makes you believe you might never order take out again. This pasta makes a great lunch the next day too. Sometimes I think it might even taste better reheated. I guarantee if you heat this up at work, your co-workers will be jealous.
This dinner is on my meal rotation once a week. If you want a variation, you can swap out some chicken for the sausage and any vegetable such as red peppers, broccoli or peas can be added or substituted. I am a fan of spinach because it tastes good, it’s healthy and I love the green color it gives the dish. To make this dish vegetarian, you can leave out the sausage or even substitute chick peas or white beans instead.

Rigatoni with Sausage Recipe
- 16 Dried Rigatoni Pasta
- 1 Olive Oil
- 1 Hot Italian Turkey Sausage (Gianelli)
- 1 Garlic chopped
- 1 Grape Tomatoes halved
- 1 Dried Basil
- 4 Dry White Wine or chicken broth
- 6 Baby Spinach chopped
- Salt and Pepper to taste
- Grated Parmesan Cheese for serving
- Boil pasta in a large pot of water according to package directions. Drain and keep warm.
- In the meantime, heat olive oil on medium high heat and cook sausage for about 5 to 7 minutes or until no longer pink. Add garlic, tomatoes, and dried basil. Cook for 5 minutes or until tomatoes are wilted.
- Stir in wine or broth and bring to a simmer. Add spinach and cooked pasta to the pan. Cook for another few minutes or until sauce is thickened.
- Add salt and pepper to taste. Serve with grated cheese if desired.
