Today we’re going back to school.  Except without the math, because no one likes math.

Except accountants and engineers. But we won’t talk about those people.

Today we’re going to learn “How to survive Fall/Winter/ALL the cold times 101.”

Now, my pupils, there are 3 ways one can become a champion-cold-weather-surviving-human, and some are more do-able than others:

  1. Run away to the Bahamas and change your identity so that no one can find you and drag you back to build snowmen with them. You may think the whole “change of identity” thang is extreme. But, go big or go home I always say. And we just established that we were getting extreme to AVOID going home. You get it.
  2. Skip the whole “running away” business and just stay in your house. I literally mean STAY in your house.  Until its summer. Like a bear.  Minus the fact that you’re a person and not an animal. I hope.
  3. Put on your granny panties, eat whole wheat apple pancakes for breakfast and then let the warm, comfort and love (that you channeled from wearing aforementioned granny panties) carry you through the rest of your day like a normal, grown-up person.

If there was a test in our fake day at school, that would be the answer.  You didn’t even have to pretend like you studied, when you really just looked at the back of the book to do your homework, because I just gave you the answer straight up.

Don’t even pretend like you don’t know what I’m talking about. We all did it.

Now. These pancakes. Think of your coziest, comfiest memory EVER, multiple it by 29, top it with crunchy, buttery, crispy crumb topping and then shove it in your mouth.

OH and then face plant into a bowl of homemade brown sugar apple cinnamon spice syrup.

Um. YES PLEASE.

Not only are these pancakes HYOOGE and fluffy, they are also protein-packed and full of whole-wheaty goodness.

You know, to balance out the crumb topping. Everyone knows your can’t have a good crisp without a little butter and sugar amIright?

So, can I get two cheers for granny panties?

Whole Wheat Apple Pancakes Recipe

Whole wheat apple pancakes are a really fall treat. Betcha can’t resist that crumble topping!

Ingredients
  

  • 1 cup Old Fashioned Oats
  • 1/4 cup White Whole Wheat Flour plus 2 tablespoons
  • 1/2 cup Brown Sugar packed
  • 5 tablespoons Butter melted
  • 1 cup White Whole Wheat Flour
  • 1/4 cup Truvia
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 2 teaspoons Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 2 Egg
  • 2 Egg Yolk
  • 1 cup Vanilla Greek Yogurt
  • 1 1/2 cups Apple chopped
  • Pure Maple Syrup for drizzling

Instructions
 

  • Preheat your oven to 375°F and spray a baking sheet with cooking spray.
  • In a large bowl, mix together the oatmeal, flour and brown sugar.  Add in the melted butter and stir until the mixture forms into small crumbs.
  • Spread onto the prepared baking sheet and bake until golden brown, about 7-8 minutes.
  • Once cooked, turn your oven to 200°F and place the crumble topping inside to keep them warm.
  • In a medium bowl, mix together the flour, Truvia, salt, baking powder, cinnamon and ginger. Set aside.
  • In a large bowl, whisk together the eggs, egg yolks, and yogurt until well mixed.
  • Stir the dry ingredients, and the chopped apples, into the wet ingredients and mix until just moist and still slightly lumpy. You don’t want to over-mix. Let the batter stand for 15 minutes.
  • Preheat your griddle to medium heat and spray with cooking spray.
  • Using 1/3 Cup measurements, drop the batter onto the heated griddle and smooth out with a spoon.
  • Cook until the edges feel set and the bottom is golden brown, about 4-6 minutes. Flip and repeat.  Continue until all the batter is gone, placing any pancakes into the oven to keep warm.
  • Drizzle with maple syrup, crumbs and DEVOUR.
